So I know that more and more games are starting to use crossplay as a feature on games such as Fortnite, Warzone, and Minecraft. But for GTA 5 online this feature has yet to have been made available. I currently have both a Xbox 360 and a PS4 with GTA 5 but I want to be able to play with my friends on the Xbox One server. Is there anyway where I can tap into that server so that I can play with Xbox One online?

Unfortunately, the answer to your question is no. Reason being is that each platform that GTA V is available on is separated at the server level so cross play is not possible. Few games today support cross play and I haven’t heard anything about R* implementing this into their current games.
