Will We Mod be creating a Trainer for Days Gone when it releases on
May 18, 2021? Would love it if you guys did just looking for information.

Trainers are made at WeMod of the game is popular with WeModders.
WeMod automatically detects how many WeModders have the game. And if it’s popular, a trainer will be made in due course.

Saying that, roughly 90% of the time, Steam trainers work fine on Epic Store games.

So Days Gone releases tomorrow, I still have yet to see a trainer or even an option to request this game or follow it on the App, When can we expect this to be available to request?

It only appears in the library if it is popular with WeModders. As said above, WeMod detects now many of them have the game.
Note that the game was a massive flop on console, it never really took off very well. It’s possible it could be a flop on PC too. We’ll have to see how the community receives it.

correction to Ravenfyre. While Days Gone may have been an initial sales flop on PS4 it has since gained an impressive amount of fan support since its release on PS Plus and as such has become very popular.
